Since I've been obsessing over The Great British Bake Off and re-watching pretty much all of the series, all I want to do is bake. I'm definitely an amateur and don't have the biggest baking repertoire. With that in mind I wanted to make something suitable for spring and fairly easy to make, and as you can tell from the title of this post, today I had a crack at baking some delicious blueberry muffins! I used a recipe from The Hummingbird Bakery Cake Days (£5.00) recipe book which has some really tasty things to try out!

What you will need..

300g (10 1/2oz) plain flour
155g (5 1/2oz) caster sugar
1 tbsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
250ml (9 fl oz) whole milk
2 large eggs
1 tsp vanilla essence
85g (3oz) melted unsalted butter
100g (3 1/2oz) fresh or frozen blueberries, or you can use any berries you choose!

Lets get cracking..

1. Preheat the oven to 190C (375F), gas mark 5, and line a tin with muffin cases.

2. Sift together the flour, caster sugar, baking powder, bicarbonate of soda and salt and place in a large bowl (I used a freestanding mixer and the bowl that comes with that). Pour the milk into a separate bowl and add the eggs and vanilla essence and mix together.


3. Start slowly mixing the dry ingredients together and add the milk, eggs and vanilla essence. Increase your mixing speed and continue until the batter is smooth. Then add in the melted butter and beat again until its incorporated together.


4. Stir in the berries by hand (I left mine whole) and make sure they are evenly spread throughout the mixture then spoon the batter into the muffin cases leaving a few centimetres gap at the top.


5. Bake in the oven for 25-30 minutes and until they are looking a nice golden brown colour. Leave them in the tin for a bit before moving them onto a cooling rack! Then of course, eat and enjoy.
